Toppings (optional): crushed tortilla chips, Poco Picante Salsa
- Heat oil in Sauté Pan over medium-high heat. Add chicken; cook until golden and cooked through, about 5–6 min per side.
- Reduce heat to medium. Add veggies, 1⁄2 cup cheddar, cream cheese, sour cream, and dip mix. Stir to combine (it’s OK if the cream cheese is not fully incorporated yet). Cover; cook 4 min, stirring frequently, or until cheese has melted.
- Top with remaining 1⁄2 cup cheese. Cover; cook 1 min or until cheese has melted.
