Ingredients
1 cup
uncooked quinoa
2 cups
water
1 tbsp
SPG SeasoningSPG Seasoning

English cucumber
1
small red onion
2 lemons or 14 cup
lemon juice
3 tbsp
olive oil
1 tbsp
package (one or another):
2 cans (14 oz/398 ml each)
chickpeas, drained and rinsed
2 cups
baby spinach
12 cup
crumbled feta cheese
Toppings (optional):
chopped pistachios or slivered almonds

Preparation
  1. In Multipurpose Steamer, combine quinoa, water, and seasoning. Cover and microwave on high 12 min, or until tender. Fluff with a fork. 
  2. Meanwhile, dice cucumber and red onion. 
  3. In a large bowl, squeeze in lemon juice and whisk with oil and dressing mix. Add cooked quinoa, diced veggies, chickpeas, and spinach; toss to combine. Top with feta.  
  4. Serve immediately or store for up to 5 days in an air-tight container in the fridge.
