Love zucchini and love dipping? Try this 15-minute zucchini ghanoush.


Ingredients

zucchini, coarsely chopped
2 tbsp
14 cup
olive oil
1 tbsp
lemon juice
Sea Salt, to taste
Black Pepper, to taste

Preparation
  1. Place zucchini in Rectangular Steamer and sprinkle with seasoning. Microwave for 8 minutes. Drain well.
  2. Place in food processor with remaining ingredients and blend until smooth.
Tips

For a creamy low-fat dip, stir in 12 cup plain Greek yogurt.

Serve with Pita Chips or fresh veggies.
